Xeni JARDIN arrives fashionably late, her platinum curls bobbing above the crowd as she sheds a floor-length faux fur to reveal a white silk, backless gown that so effectively evokes Marilyn Monroe, it nearly stops cocktail chatter cold. And that’s saying something, because there are some big brains in this room who aren’t easily distracted, among them a lead scientist of the recent Mars missions and the inventor of the Palm Pilot.
Tonight i was brought my French Dip Sandwich by a woman who had, as a child, been attacked by a monkey who bit off part of one of her fingers and was immediately shot dead in front of her. I knew this about her, but she was not aware that I knew this.
I am a student of the egg. I thank whomever created it and it never ceases to amaze and delight me. I love a smooth custard, a cake with perfect crumb, the magic of consomme, and a coddled egg in an egg cup garnished simply with sea salt and black pepper. I will study with butter, eggs, cream, flours, and sugar my whole life and hope to create a few delicacies worth remembering.
