So, I’m not a big car guy…could you explain why someone would put that engine in that van? Is there a legit purpose or is just novelty?

Novelty. I assume the person who did it rationalized it as “I need all this torque and power to really get around offroad” or something, but it’s a disaster of a frankencar.

because you CAN
If you happen to have the engine and a big pile of twisted sheetmetal, say, and then you realize that they’ve got very similar engine configurations, and you’re bored in your shop… Doubly so if that shop happens to be an old VW/Porsche shop and you’ve got access to a van that doesn’t run, too. Remember that most of the old-VW shops also specialize in old-Porsche and vice versa.

Or did some loser put a riser kit on this thing? Great, a VW Monster van…
